How long do the eggs stay good?

Our eggs are unwashed, so they keep their natural protective coating (the bloom), which helps them stay fresh longer without refrigeration.

  • On the counter (room temp): about 2–3 weeks
  • In the fridge: about 3 months

If you know you’ll use them up quickly, the counter is fine. For the longest shelf life, refrigerate as soon as you can.

Should I wash the eggs before using them?

Yes — give them a quick rinse under running water right before you crack or cook them. We leave eggs unwashed until then on purpose, since washing removes the bloom and shortens shelf life. Wash only what you’re about to use, and keep the rest of your dozen unwashed in storage.
